Healthy and Salacious Chicken Marsala Recipe

Who doesn’t like Chicken Marsala Recipe! But we often avoid the recipe because of its calories and wine added into it. However, that’s not the solution. The solution is to look for healthier alternatives to make this recipe healthy and perfect for the health conscious people. In today’s post, I will share a recipe which is a healthier version of Chicken Marsala that’s low in fat and calories without spoiling its taste and flavors.

This recipe is simple, healthy and absolutely delectable. For this recipe, use chicken breasts pieces which is healthy and less in fats. This recipe is great when you want a gourmet style dinner that can be prepared in 30 minutes or less. And you can serve this recipe with grilled veggies, mashed potatoes, or with brown rice. I got this recipe from Weight Watchers Comfort Classics : 150 Favorite Home-Style Dishes. And the moment I spotted this recipe, I decided to make this recipe for dinner. However, I made few changes in this recipe to make it more simple and delicious.

It’s saucy and flavorsome and whole family enjoys this recipe. Nevertheless, let’s start cooking this simple and healthy chicken Marsala recipe for dinner tonight –

This recipe serves up to 4 servings

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Total: 30 minutes
Ingredients –
  • 4 (½ pound) pieces of boneless, skinless chicken breasts
  • 2 teaspoons olive oil
  • 1 large shallot, finely chopped
  • 2 cups sliced mushrooms2-3 garlic cloves, minced
  • ½ teaspoon dried thyme
  • ½ teaspoon salt and Pepper or to taste
  • ½ teaspoon garlic bread seasoning
  • ½ cup dry Marsala wine
  • ½ cup reduced-sodium chicken broth
  • Freshly parsley, chopped for garnishing
Method –

  1. Pound the chicken breasts to an even ½-inch thickness and sprinkle salt, pepper and dried thyme over it.
  2. Now heat 1 teaspoon of the olive oil in a large nonstick skillet over medium-high heat. Working in batches if necessary, add the chicken (but don’t overcrowd the pan) and cook until it’s browned and cooked through, 3 to 4 minutes on each side.
  3. Remove from the pan and set aside.
  4. Now again heat the remaining 1 teaspoon of oil in that same skillet. Add mushrooms and remaining salt and thyme. Cook, stirring occasionally, until the mushrooms are slightly browned and turn soft, cook for about 4 to 5 minutes
  5. Now into this add the shallots and cook, stirring often until the shallots start to soften, about 2 minutes. Add the garlic and stir for another minute.
  6. Once all chicken and vegetables are cooked add the Marsala and broth and cook until the sauce thickens a little, about 1 minute. Add the chicken back to the skillet and cook until heated through, about 2 more minutes.
  7. Sprinkle chopped parsley for garnishing. Serve it over wheat pasta or brown rice.
